  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh or frozen peas
  • 4 cups vegetable broth
  • 1/2 cup fresh mint leaves, chopped
  • Juice of 1 lemon
  • Belle Donne salt and pepper to taste


  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent, about 5 minutes.
  2. Add the peas and vegetable broth, and bring to a boil.
  3. Reduce the heat and simmer for about 10 minutes, until the peas are tender.
  4. Remove the pot from the heat and let it cool for a few minutes.
  5. Using an immersion blender or a regular blender, puree the soup until smooth.
  6. Add the chopped mint, lemon juice, salt, and pepper, and stir to combine.
  7. Taste and adjust the seasoning as needed.
  8. Ladle the soup into bowls and serve hot, garnished with additional mint leaves if desired.
